Smore’s are a family favorite, but not something we tend to make frequently because I would typically only make them with a campfire and camping. My children and I started making smore’s brownie cupcakes a year or so ago and it’s been a great replacement for smore’s over a campfire. Most recently they have been asking me to make a smore’s cake — that is now on the list to make but in the meantime we whipped up some donuts which don’t take as much time to make and easy with our mixes.
You’ll need our chocolate cake mix and vanilla frosting mix to make these. It is top 14 allergen free, gluten free and vegan. For the chocolate drizzle on top we used safe chocolate melted. This part is optional but definitely recommended!
The first step to making these is to gather all your ingredients and supplies.
Smore’s Donuts
Tools Needed:
- Mixing bowl(s)
- Spatula
- Measuring cup
- Donut Pan
- Non-stick cooking spray
Chocolate Cake Mix Ingredients Needed:
- Kate’s Safe & Sweet Chocolate Cake Mix
- 1 teaspoon Apple Cider Vinegar (or Vinegar)
- 5 teaspoons of your Safe Oil
- 1 cup of Rice milk (or safe milk of your choice)
(above amounts are what is need to make a full batch. If you are making a half batch adjust ingredient measurements as needed per packaging.)
Cake Mix Instructions:
- Preheat oven to 325°F. Lightly spray the donut pan with non-stick cooking spray.
- In a small bowl blend together the rice milk and apple cider vinegar, and set aside.
- In a medium bowl, blend the chocolate cake mix, oil, and milk and apple cider vinegar together until smooth. Scrape the sides of the bowl as needed.
- Spread batter evenly into prepared donut plan
- Bake for 12-15 minutes and until toothpick inserted comes out clean.
- Remove from oven and allow pan to cool on wire rack.
Topping Ingredients Needed:
- 1 cup Kate’s Safe & Sweet Vanilla Frosting Mix
- 1 cup marshmallows
- up to 2 teaspoons of Rice milk (or safe milk of your choice)
- Chocolate chips/chocolate bar
- just a small amount will be needed depending on how much you want to drizzle on top
- you can use your preference of semi-sweet, milk or dark chocolate
- 1 – 2 cups of Crushed graham crackers
- you can use as many or as little as you’d like!
Tools Needed:
- Mixing bowl(s)
- Spatula
- Measuring spoon
- Measuring cup
- Whisk
- Stovetop
- Ziplock or Piping bag
- for drizzling melted chocolate on top of donuts
Instructions:
- Sift Vanilla Frosting Mix into a medium bowl and set aside.
- Melt marshmallows over low-medium heat stirring frequently.
- Remove from heat once melted and pour marshmallows into bowl with frosting mix.
- Whisk together to combine.
- Add in up to 2 teaspoons of milk if needed for a thinner consistency.
Be sure crushed graham crackers are ready and set aside. If drizzing with chocolate melt over medium heat in a double broiler or in microwave.
Once the donuts have completely cooled you can glaze them.
You can dip each donut into the bowl or spoon the glaze on top. If you are topping with crushed graham crackers be sure to add them on top after glazing each donut as the glaze may harden quickly.
After you have glazed all the donuts and topped with graham crackers you can drizzle the chocolate on top.
Donuts are best served same day. To extend shelf life store in fridge. You can also freeze these and defrost 30 minutes before you’d like to eat them.
