Kate's Safe and Sweet - Peppermint Donuts Stacked

Delicious donuts are so easy to make with our cake mixes.  We made some tasty peppermint donuts for our weekend breakfast and these were amazing!  We are taking votes on what we want to have for our Christmas morning breakfast and these are a top choice.  For these we used our Chocolate Cake Mix and Vanilla Frosting Mix. Easy to make and so festive and pretty.

Before we jump to the recipe I would like to share some easy tips.  I like to use a piping bag to pour the batter into the donut pan but you can also use a ziplock bag or spoon. Just cut a hole in one corner and pipe the batter into the pan.

Be careful when filling the donut pans. You don’t want to overfill the pan cavities or the holes in the middle will close up.

 

The first step to making these is to gather all your ingredients and supplies.

Peppermint Donuts

Makes up to 40 x 3 inch sized cookies

Tools Needed:

  • Mixing bowl(s)
  • Spatula
  • Measuring spoons
  • Measuring cups
  • Non-stick cooking spray
  • Donut Pan(s)

Ingredients Needed: 

  • Kate’s Safe & Sweet Chocolate Cake Mix
  • Kate’s Safe & Sweet Vanilla Frosting Mix
  • Apple cider vinegar (or vinegar),
  • Rice milk (or milk of your choice)
  • Canola oil (or oil of your choice)
  • Non-stick cooking spray
  • Crushed candy canes

(above ingredients are for making a full batch of donuts which is 12 donuts in a standard pan + 3 cupcakes or 18 donuts.  adjust ingredients if you’d like to make a smaller batch.)

Instructions:

  1. Lightly grease donut (pans).
  2. Preheat oven to 375 degrees and prepare cake mix as per label.
  3. Cut edge of piping bag or a small corner of a ziploc bag.
  4. Fill bag with mix. Fill donut pans 3/4 of the way each.
  5. Bake in preheated oven for 10-12 minutes.
  6. Remove from oven and allow pan to cool on wire rack for about 10 minutes.
  7. Once cooled remove the donuts from pan and allow to cool directly on wire racks.
  8. While cooling, you will prepare the frosting as per label eliminating butter/shortening, just use your safe milk and add a up to a teaspoon of peppermint extract for peppermint flavor.  You can also add more extract if you’d like to.  We usually start with 1/2 teaspoon and taste throughout to see if we like it. 
  9. Whisk the frosting mix and milk together.  Icing will be thinner so you can drizzle over donuts or dip into.

After donuts are baked and cooled you then dip into or drizzle the peppermint glaze on top and then add your crushed candy canes.  Of course you can add whatever toppings you’d like – another flavor of frosting, sprinkles, and mini chocolate chips work great!

After donuts are baked and cooled you then dip into or drizzle the peppermint glaze on top and then add your crushed candy canes.  Of course you can add whatever toppings you’d like – another flavor of frosting, sprinkles, and mini chocolate chips work great!

Be sure to allow the glaze to set at room temperature for about 20-30 minutes before stacking or serving.

These make a great breakfast treat or delicious snack at any time of day. They are best when eaten the same day but can be covered and stored at room temperature up to 2 days or in the fridge for up to 5 days.  Please note, the thinner the glaze the soggier the donuts may get.
