BOO! Check out our not so spooky boo brownie bites! Fun to make and eat! These little ghost brownies can be top 14 allergen free, gluten free, and vegan depending on your choice of marshmallows and chocolate chips.

Kate's Safe & Sweet - Boo Brownies for halloween

You’ll need our double chocolate brownie mix (which requires just oil and water to bake) and our vanilla frosting mix for the top of the brownie bites and bottom of the ghosts. You’ll also need a large marshmallow and mini chocolate chips for their eyes and mouth.

The first step to making these is to gather all your ingredients and supplies.

BOO Brownie Bites

Tools Needed:

  • Mixing bowl(s)
  • Spatula
  • Measuring cups
  • Baking pan
    • A brownie bite pan is what we used and works well for these
  • Non-stick cooking spray
  • Parchment paper

Brownie Ingredients Needed:

  • Kate’s Safe & Sweet Double Chocolate Brownie Mix
  • 1/3 cup of your safe oil
  • 2/3 cup of water

(above amounts are what is need to make a full batch.  If you are making a half batch adjust ingredient measurements as needed per packaging.)

Frosting Ingredients Needed:

  • Kate’s Safe & Sweet Vanilla Frosting Mix
  • 1/2 cup butter of choice
  • 1/4 cup vegetable shortening
  • 3-4 tablespoons of your safe milk

You may use 3/4 cup of your safe butter if you don’t want to use shortening.

(above amounts are what is need to make a full batch.  If you are making a half batch adjust ingredient measurements as needed per packaging.)

Ghost Ingredients Needed:

  • Large Marshmellows (one needed per ghost)
  • Mini chocolate chips (three needed per ghost)

you’ll need as many marshmallows and chocolate chips as ghosts you want to make.

Brownie Mix Instructions:

  1. Preheat oven to 325°F. Lightly spray the side of the pan with non-stick cooking spray.
  2. If using a larger pan, line with parchment paper.
  3. In a medium bowl, blend the brownie mix, water, and oil together until smooth. Scrape the sides of the bowl as needed.
  4. Spread batter evenly into prepared pan. Note: batter will be thick.
  5. Bake on middle rack as follows:

BAKING TIMES for a full batch:

9” x 9” pan 29-32 minutes

11” x 7” pan 27-30 minutes

Brownie Bite pan 15-20 minutes

  1. Remove from oven and allow pan to cool on wire rack.
  2. If you didn’t use a brownie bite pan then cut into squares to prepare to frost and assemble ghosts on top.

Frosting Instructions

1. In a large mixing bowl with a hand mixer, or a stand mixer, combine the butter of choice with the shortening. Whip until light and fluffy, about 3 minutes.

2. Add the contents of the vanilla frosting mix and 1 tablespoon of milk at a time. Whip again until the frosting is light and fluffy, adding a splash more of milk if needed.

3. Since you need the frosting to be a little more runnier with these, you’ll want to add a bit more milk than you would normally.

How to Assemble the Ghosts

Dip the mini chocolate chips into the frosting and make the ghosts eyes and mouth. The frosting is acting as glue! Place atop the marshmallows.

Add a dollop of frosting onto the top of the brownie bite. Remember, you want it to be a thinner frosting so it can pour down the sides of the brownie bite.

Take the marshmallow and place on top of the frosting. This is so much fun for kids to do.

I recommend assembling the ghosts the day that you are going to be eating them, as the marshmallow can get a little hard on the outside.

The brownies itself are best served within 3-5 days.
