They make a delicious dessert style muffin. They are sure to fully satisfy your sweet tooth. The sweetness of the white chocolate sort of mimics the flavor of frosting, but all mixed in and of course the pumpkin ensures a moist rich texture.
The recipe is top 14 allergen free, gluten free and vegan.
The first step is to gather all your tools and ingredients.
White Chocolate Pumpkin Muffins
Tools Needed:
- Mixing Bowls
- Spatula
- Measuring Cups / Spoons
- Muffin Pan
- Non-stock cooking spray
- Frosting Bag & Frosting Tip if frosting
Cake Ingredients Needed:
- 1 x Kate’s Safe & Sweet Vanilla Cake Mix
- 1/2 cup rice milk (or milk of your choice)
- 2 tsp apple cider vinegar
- 2 tbsp canola oil
- 3/4 cup pumpkin puree
- 2 tbsp molasses
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice
- 1/2 tsp nutmeg
- 1/2 tsp allspice
- 1/2 tsp ground cloves
- 2/3 cup white chocolate chips (regular chocolate would work as well)
Muffin Instructions
- Begin by preheating the oven to 350F. Line a cupcake tray with liners or spray with oil. Set aside.
- In a small mixing bowl, combine the milk of your choice with the apple cider vinegar. Let rest for a few minutes.
- In a large mixing bowl, place the vanilla cake mix and spices. Give a quick mix. Into this bowl, measure and add the pumpkin puree, molasses, and pour the milk mixture and oil. Mix well until fully incorporated.
- Gently fold in your choice of chocolate chips.
- Spoon batter into prepared muffin tin.
- Bake for 18-22 minutes, depending on the darkness of your baking pan. Cupcakes are done with a toothpick inserted into them removes cleanly.
- Let cupcakes rest for 10 minutes before removing them from the warm baking tray.
Optional: top muffins with a vanilla or cream cheese frosting!
My kids devoured hers in short order, and the rest went quickly, as well.
