Strawberry cake has been one of the most asked for recipes and we are excited to share with you.This cake is full of strawberries both in the cake and the icing. This cake is light, tender, moist, and is bursting with strawberry flavor.
Both the cake and frosting is made this using a mix of freeze dried and fresh strawberries.
For this cake you will use our vanilla cake mix and vanilla frosting mix and is top 8 allergen free, vegan and gluten free. The cake can be topped with our sprinkles if you’d like too!
The first step to making this cake is to gather all your ingredients and supplies.
Strawberry Snack Cake
Cake Tools Needed:
- Mixing bowls
- Spatula
- Measuring spoons
- Measuring cups
- Baking Pan
- Non-stick cooking spray
- Parchment paper
We made our cake with one 8″ square baking pan. You can use the size of your choice or use muffin tins.
Cake Ingredients Needed:
- 1 x Kate’s Safe & Sweet Vanilla Cake Mix
- 1/3 cup reduced strawberry puree
- 2/3 cup milk of choice (I used rice milk)
- 2 teaspoons apple cider vinegar
- 3 1/2 tablespoons neutral oil (we used canola)
- 1/3 cup freeze dried strawberries – ground into a fine powder
Cake Mix Instructions:
- Preheat oven to 350°F. Line the bottom of the cake pan(s) with parchment paper and lightly spray the pan sides with non-stick cooking spray.
- In a medium bowl mix together the milk and apple cider vinegar.
- In a large bowl, blend the cake mix and freeze dried strawberries,
- Add milk and apple cider vinegar to the mix large bowl. Add in reduced strawberry puree and oil.
- Stir together all ingredients well being sure to scrape the sides and bottom of the bowl during mixing.
- Pour batter into the pan.
- Bake on middle rack as directed below until toothpick inserted 2 inches from edge comes out clean.
- 8″ pan = 25-27 minutes
- Remove the baking pan(s) from the oven and place a wire cooling rack.
- While the cake is cooling prepare the frosting below.
Frosting Ingredients Needed:
- 1 cup of Kate’s Safe & Sweet Vanilla Frosting Mix
- 1/8 cup freeze dried strawberries – ground into a fine powder
- 1/2 cup Butter of choice
- 1/4 cup Vegetable Shortening
- 1/8 cup reduced strawberry puree
Frosting Instructions:
- In a medium bowl combine the frosting mix and freeze dried strawberries and set aside.
- In a large mixing bowl with a hand mixer or a stand mixer, combine the butter and shortening together until smooth and creamy.
- Add the contents of the frosting packet and reduced strawberry puree.
- Whip on high speed for 3-4 minutes or until light and fluffy.

To frost the cake, place it on a cake stand or flat plate. Frost in an even coating. Optional, top with sprinkles!
