Mint Glazed Donuts

We’re all about mint and chocolate and for St. Patrick’s Day week we decided to make some donuts with a mint glaze and the kids and I really loved these!

You’ll need our chocolate cake and vanilla frosting mix to make these. It is top 14 allergen free, gluten free and vegan. For the chocolate drizzle on top we used safe chocolate melted. This part is optional.

The first step to making these is to gather all your ingredients and supplies.

Mint Glazed Donuts

Tools Needed:

  • Mixing bowl(s)
  • Spatula
  • Measuring cup
  • Donut Pan
  • Non-stick cooking spray

Chocolate Cake Mix Ingredients Needed:

(above amounts are what is need to make a full batch.  If you are making a half batch adjust ingredient measurements as needed per packaging.)

Cake Mix Instructions:

  1. Preheat oven to 325°F. Lightly spray the muffin pan with non-stick cooking spray.
  2. In a medium bowl, blend the brownie mix, water, and oil together until smooth. Scrape the sides of the bowl as needed.
  3. Spread batter evenly into prepared muffin tin. Note: batter will be thick.
  4. Bake for 12-15 minutes and until toothpick inserted 2 inches from edge comes out clean.
  5. Remove from oven and allow pan to cool on wire rack.

Mint Glazed Ingredients Needed:

  • Kate’s Safe & Sweet Vanilla Frosting Mix
  • up to 4 teaspoons of Rice milk (or safe milk of your choice
  • 1/2-1 teaspoon of pure peppermint extract (if you like it stronger in peppermint flavor use more)
  • 1 drop of green food color

Tools Needed:

  • Mixing bowl(s)
  • Spatula
  • Measuring spoon
  • Measuring cup
  • Whisk

Instructions:

  1. Sift Vanilla Frosting Mix into a medium bowl.
  2. Whisk in 2 teaspoons of milk and continue adding more as needed.
  3. Add peppermint extract and miix until well combined and smooth.
  4. Add more peppermint extract if you’d like it to have a stronger peppermint flavor.
  5. Finish by adding one drop of green food coloring (optional) and stirring to make a green color.

Once the donuts have completely cooled you can glaze them.

Kate's Safe & Sweet - Mint Donuts HalfDonuts are best served same day. To extend shelf life store in fridge. You can also freeze these and defrost 30 minutes before you’d like to eat them.
