Hot Cocoa Brownie Bites

We have been enjoying the downtime after the holidays and after taking a week off from baking, we have been working on new recipes including these delicious hot cocoa brownie bites. These hot cocoa brownie bites topped with mini marshmallows and mini chocolate chips will surely put you in the mood for winter.

The recipe is top 14 allergen free, gluten free and vegan.

You’ll need our double chocolate brownie mix (which requires just oil and water to bake) and our chocolate frosting mix for frosting. These little bites are delicious to eat aside a glass of your safe milk or hot cocoa.

The first step to making these is to gather all your ingredients and supplies.

Hot Cocoa Brownie Bites

Tools Needed:

  • Mixing bowl(s)
  • Spatula
  • Measuring cups
  • Mini Muffin Pan or Mini Square Brownie Pan
  • Non-stick cooking spray
  • Hand or Stand Mixer

Brownie Ingredients Needed:

  • Kate’s Safe & Sweet Double Chocolate Brownie Mix
  • 1/3 cup of your Safe Oil
  • 2/3 cup of water
  • 1/2 cup freeze dried mini marshmallows

(above amounts are what is need to make a full batch.  If you are making a half batch adjust ingredient measurements as needed per packaging.)

Frosting Ingredients Needed:

  • Kate’s Safe & Sweet Chocolate Frosting Mix
  • 1/2 cup butter of choice
  • 1/4 cup vegetable shortening
  • 3-4 tablespoons of your safe milk
  • 2 tablespoons freeze dried marshmallows
  • 2 tablespoons mini semi-sweet chocolate chips

You may use 3/4 cup of your safe butter if you don’t want to use shortening.

(above amounts are what is need to make a full batch.  If you are making a half batch adjust ingredient measurements as needed per packaging.)

Brownie Mix Instructions:

  1. Preheat oven to 325°F. Lightly spray the side of the pan with non-stick cooking spray.
  2. In a medium bowl, blend the brownie mix, water, and oil together until smooth. Scrape the sides of the bowl as needed.
  3. Gently fold in the 1/2 cup of marshmallows.
  4. Spread batter evenly into prepared pan. Note: batter will be thick.
  5. Bake on middle rack for about 12-16 minutes.
  6. Remove from oven and allow pan to cool on wire rack for at least 2 hours.

Frosting Instructions

  1. In a large mixing bowl with a hand mixer, or a stand mixer, combine the butter of choice with the shortening. Whip until light and fluffy, about 3 minutes.
  2. Add the contents of the chocolate frosting mix and 1 tablespoon of milk at a time. Whip again until the frosting is light and fluffy, adding a splash more of milk if needed.

Frost the Brownies

After the brownies are cooled, spread the frosting on the brownie bites. Top with the mini marshmallows and chocolate chips.

These brownies are best served within 3-5 days.
