We love to make donuts with our mixes – it’s so fun and a great way to bring a little happiness to the start of our day. My daughter is a big fan of blackberries and was very excited when I suggested blackberry donuts for breakfast! Made with fresh blackberries and our Vanilla Cake Mix and Vanilla Frosting Mix. This recipe really screams Spring which is just around the corner!

The recipe is top 14 allergen free, gluten free, and vegan.

Baked donuts are easy to make especially with kids and not having the clean-up of frying oil. These are full of fresh blackberry flavor and a super tasty blackberry glaze.
The batter is fairly quick and easy to put together. The extra step we have here is creating a blackberry puree that gets used in both the batter and the glaze. The first step to make these is to gather all your tools and ingredients.
Blackberry Glazed Donuts
Tools Needed:
- Mixing Bowl(s)
- Spatulas
- Mixing Spoon(s)
- Whisk
- Measuring Cups / Spoons
- Food Processor or Blender
- Saucepan & Stove
- Mesh Strainer
- Donut Pan
You can also make a cake if you’d like with this recipe. This recipe will make 12 donuts plus 3 cupcakes and can be easily converted down to a half batch.
Blackberry Donut Ingredients Needed:
- 1 x Kate’s Safe & Sweet Vanilla Cake Mix
- 5 tbsp canola oil
- 1 cup milk of choice
- 1 tsp apple cider vinegar
- Juice of 1 lemon
- 2 tablespoons sugar
- 1 cup of fresh blackberries
- you will make about blackberry puree with the blackberries for both the donuts and the glaze (see below how to make this)
Blackberry Puree Instructions:
- Place the berries, sugar, and lemon juice in a saucepan over medium heat. Stirring frequently, bring the mixture to a simmer. Cook for 10 minutes, or until the blackberries are mostly cooked down.
- Remove the pan from the heat and pour the mixture through a fine-mesh strainer set over a bowl. Press the mixture through the strainer to remove any seeds. Discard the seeds.
- Allow the puree to cool before using in the donut and glaze batter.
Donuts Instructions:
- Preheat oven to 350°F. Lightly spray the sides and bottom of your donut pan and set aside.
- Stir together the milk and apple cider vinegar.
- In a large bowl, blend the cake mix, oil, vinegar and milk mixture, and 1/3 cup of the blackberry glaze together until smooth. Scrape the sides of the bowl as needed.
- Pour batter evenly into donut pan.
- Bake on middle rack for 12-15 minutes until toothpick comes out clean.
- Remove the baking pan(s) from the oven and place a wire cooling rack.
- While the donuts are cooling prepare the glaze below.
Blackberry Glaze Ingredients Needed:
- 1 cup of Kate’s Safe & Sweet Vanilla Frosting Mix
- 1/4 cup butter of choice
- 1/2 cup vegetable shortening
- 4 tablespoons of blackberry puree (see above for how to make this)
- up to 3 teaspoons of your safe milk
You may use 3/4 cup of your safe butter if you don’t want to use shortening.
Glaze Instructions:
- In a large mixing bowl with hand mixers or a stand mixer, combine the butter and shortening together until smooth and creamy.
- Add half of the contents of the frosting packet.
- Add 2 tbsp of the blackberry puree.
- Whip on high speed for 3-4 minutes and add the other half of the frosting packet and up to 2 additional tbsp of the blackberry puree.
- Continue to whip until light and fluffy adding safe milk if needed to make the consistency thinner.
You can spread the glaze onto the donuts. You can also dip the donuts into it. After doing so return the donuts back to the cooling rack to sit until the glaze has set, about 10 minutes. Enjoy!

My daughter was so excited about this recipe, she loves blackberries and said the amount of blackberry taste was just perfect.

Moist and delicious! You can top with an added blackberry if you’d like.
