Kate's Safe & Sweet - Royal Icing Lots of Cookies

I recently got asked if we could make royal icing with our frosting mix – and the answer is yes! If you are not familiar with royal icing it is a thick white icing use to decorate mostly cookies. It dries hard and is very versatile. You can make this thin or thicker depending on how you want to use it.

To make this frosting we used our Vanilla Frosting Mix.  The first step to making these is to gather all your ingredients and supplies.

Egg Free Royal Icing Ingredients Needed:

  • 2 cups Kate’s Safe & Sweet Vanilla Frosting Mix
  • 6-8 teaspoons (your choice of) milk
  • 4 teaspoons corn syrup
  • food coloring optional

Instructions:

  1. Sift Kate’s Safe & Sweet Vanilla Frosting Mix into a medium bowl.
  2. Add 6 teaspoons milk and corn syrup. Stir vigorously until icing is smooth.
  3. If needed, add additional milk to thin icing more. You’ve reached the correct consistency for frosting if a scoop of icing slowly falls off the spoon.
  4. If making colored icing, divide into bowls and add food coloring.

Tips for Making Cookie Icing and Decorating:

  • Start with a couple teaspoons less of milk. Add the last 2 teaspoons as necessary.
  • To achieve the perfect consistency add more frosting mix to thicken and a touch of milk to thin.
  • You’ve reached the correct consistency for frosting if a scoop of icing slowly falls off the spoon.
  • Traditionally this icing is flavored with almond or vanilla extract, but orange, lemon, maple, or coconut extracts can also be added.  Our frosting mix already has vanilla included but feel feel to add more. If using an extract use 1/2 teaspoon.  
  • Sifting the frosting mix before adding milk will eliminate any potential lumps in the frosting.
  • Icing can be piped as an outline and filled in for pristine edges. Alternatively, it can also be spread with a small knife and decorated with sprinkles.
  • This frosting hardens quickly so have sprinkles ready to put on immediately.
  • Before stacking or wrapping cookies, make sure the icing is completely hard. Set cookies on a baking sheet for 12 hours. 

Royal icing is great on both sugar and gingerbread cookies and drawing decorative shapes or gluing together a gingerbread house. It hardens when it dries, so decorations stay in place.

Royal icing can be stored at room temperature for up to 3 days.
