Kate's Safe & Sweet - Pride Cake

June is Pride Month which is all about lifting up LGBTQ voices, celebrating LGBTQ culture and the supporting LGBTQ rights.

This colorful rainbow Pride cake is an amazing way celebrate! You could also go the route of making a rainbow layered cake, but we decided to do a chocolate cake with a fun rainbow on top and along with some hearts using our fluffy vanilla buttercream. Paired alongside mini rainbow cakes made with our rainbow baking box.

Kate's Safe & Sweet - Pride Cake and Rainbow Cupcakes

For this cake we used our Chocolate Cake Mix and Vanilla Frosting Mix.  The first step to making these is to gather all your ingredients and supplies.

Cake Ingredients Needed:

  • Kate’s Safe & Sweet Chocolate Cake Mix
    • 1 tsp apple cider vinegar
    • 1 cup rice milk or milk of choice 
    • 4 tablespoons canola oil

Cake Tools Needed

  • Mixing bowl(s)
  • Measuring cups
  • Measuring spoons
  • Spatula 
  • Piping Bags and Tips
    • a 3M star was used to pipe the hearts
  • Baking Pan
    • we used a sheet pan for our cake

Cupcake Directions:

  1. Preheat the oven to 375 degrees and place your oven rack in the middle of the oven. Prepare your cake pan with parchment paper on the bottom and cooking spray. Set the pan aside. 
  2. In a large mixing bowl, combine the milk of choice with the apple cider vinegar and set aside.
  3. Add the chocolate cake mix into a medium bowl and milk and apple cider vinegar mixture, and oil.  Stir well making sure everything is well incorporated.  Scrape the bottom and sides of the bowl to get all the ingredients mixed.\
  4. Pour the batter into the prepared cake pan (s). 
  5. Place in the oven and bake for 35-45 minutes depending on the size of your pan.
  6. Remove from the oven and allow to cool on wire rack.  
  7. Prepare frosting as per below and frost when completely cooled.

Vanilla Frosting Ingredients Needed:

  • 1 x Kate’s Safe and Sweet Frosting Mix
  • 1/2 cup Butter of choice
  • 1/4 cup Vegetable Shortening
  • 3-4 teaspoons of Milk of choice
  • Rainbow Colors Food Coloring

Tools Needed:

  • Mixing bowl(s)
  • Spatula
  • Measuring spoon
  • Measuring cup
  • Hand mixer or stand mixer
  • Bowls for making different colored frosting

Instructions:

  1. In a large mixing bowl with a hand mixer, or a stand mixer, combine the butter of choice with the shortening. Whip until light and fluffy, about 3 minutes.
  2. Add the contents of the vanilla frosting mix. Add 1 tablespoon of milk at a time. Whip again until the frosting is light and fluffy, adding a splash more of milk if needed.

Cake Instructions:

  1. After frosting is completed set aside some white frosting to do a crumb coat onto the cake.
  2. Divide the remainder of the frosting among bowls to make the frosting colored. Color as to the colors you’d like for your rainbow.
  3. Decorate with an offset spatula blending the colors as you go.
  4. Adhere a star piping tip to a piping bag and fill with frosting.  Pipe hearts if desired.
  5. Pipe along a border as desired as well.
