Glazed Lemon Donuts

Lemon donuts are a delicious breakfast for spring, Easter and Mother’s Day ? This recipe is top 14 allergen free, vegan, and gluten free.

Our family loves anything lemon and making anything lemon is fun as we have a lemon tree in our backyard!  Fresh lemons are easy to come by around here and making these donuts are easy to do with kids as we aren’t using hot frying oil.  

These lemon treats are super easy to make using our vanilla cake mix and vanilla frosting mix.

In addition to our mixes and ingredients needed for those you’ll also need some lemons of course! You can use lemon concentrate or freshly squeezed lemon- it’s up to you. We have both options listed below.  Oh and you’ll also need some finely grated lemon rind ? These are so moist and tasty!

The batter is fairly quick and easy to put together.  The first step to make these is to gather all your tools and ingredients.

Glazed Lemon Donuts

Tools Needed:

  • Mixing Bowl(s)
  • Spatulas
  • Mixing Spoon(s)
  • Whisk
  • Measuring Cups / Spoons
  • Piping bag or Ziploc bag
  • Grater
  • Donut Pan
  • Non-Stick Cooking Spray

This recipe will make 12 donuts plus 3 cupcakes and can be easily converted down to a half batch. 

Glazed Lemon Donut Ingredients Needed:

  • 1 x Kate’s Safe & Sweet Vanilla Cake Mix
  • 3 1/2 tbsp canola oil 
  • 1 cup milk of choice
  • 1 tsp apple cider vinegar 
  • 1/2 teaspoon lemon concentrate or 1 tablespoon of freshly squeezed lemon
  • Up to 2 tablespoons finely grated lemon rind

Donuts Instructions:

  1. Preheat oven to 350°F.  Lightly spray the sides and bottom of your donut pan and set aside.
  2. Stir together the milk and apple cider vinegar.
  3. In a large bowl, blend the cake mix, oil, vinegar and milk mixture, and lemon concentrate/freshly squeezed lemon together until smooth. Scrape the sides of the bowl as needed.
  4. Fold in up to two tablespoons of finely grated lemon rind.
  5. Using a piping bag or ziplock place batter inside.  Snip a small end of the bag and pour evenly into donut pan.
  6. Bake on middle rack for 12-15 minutes until toothpick comes out clean.
  7. Remove the baking pan(s) from the oven and place a wire cooling rack.
  8. While the donuts are cooling prepare the glaze below.

Tip:  You want to bake until the donuts and donut holes are cooked through, set, and springy to the touch. Let the donuts cool slightly while you make the lemon glaze (a simple combination of lemon juice and our Vanilla Frosting Mix). 

Lemon Glaze Ingredients Needed:

  • 1 cup of Kate’s Safe & Sweet Vanilla Frosting Mix
  • 3 tablespoons of lemon juice, or as necessary for consistency
  • (optional) finely grated lemon rind to sprinkle on top

Above recipe can be doubled or tripled which would be using the entire bag of frosting mix which is ~3 cups.

Glaze Instructions:

  1. In a large mixing bowl add the frosting mix.
  2. Slowly drizzle the lemon juice while whisking until smooth and combined.

You may need to play with the frosting mix and lemon juice amounts slightly as necessary for desired consistency and flavor.

Dip the top of each donut in glaze and return the donuts back to the cooling rack to sit until the glaze has set, about 10 minutes. If you can’t wait for the glaze to harden that is fine too- they are yummy both ways.  Enjoy!

Tips: Do NOT use lemon oil and lemon extract interchangeably because they’re not the same; oil is much more potent and intense.
