Kate's Safe and Sweet Cake Pops

In today’s recipe feature we are sharing a fun recipe for cake pops… sprinkled with lots and lots of sprinkles too (of course you can add your own toppings too!) Allergy friendly, vegan, and gluten free.

Each Wednesday we’re sharing our versatile our mixes are (check out our lemon cupcakes and easy baked donuts recipes from the past two weeks.)

The first step to making these is to gather all your ingredients. You’ll want to prepare our cake and frosting mixes as per the labels on the mixes. You can make these using our vanilla cake mix and vanilla frosting mix combined or chocolate cake mix and chocolate frosting mix combined.

After the cake is done allow to cool completely then break up into small pieces into a bowl. Kids really love helping with this part! Add about 1/4 – 1/3 cup of the prepared frosting to the crumbled cake mix and combine completely.

Next you’ll want to roll the cake & frosting mixture into balls and place on a baking tray.

Using your safe chocolate (vanilla or chocolate work for this as well) you’ll melt via microwave or stove and double boiler. Dip the treat stick into the melted chocolate and insert stick into the cake balls.

Place the cake pops on tray and into the freezer for about 10 minutes to allow them to firm up and the chocolate to dry completely.

Remove tray from freezer and dip or roll the cake balls into the melted chocolate. This can be a little tricky especially if kids are helping but that’s part of the fun!

If you have a cake pop stand you can place them into there to dry or grab some styrofoam and use that. You can also lay onto parchment paper.

Add your choice of toppings prior to them drying. We love using sprinkles!

You’ll see our vanilla chocolate was giving us a little bit of an issue but they are still super tasty!

You can save the remainder of the frosting in the fridge for other uses (cookies, use as a topping for brownies or waffles, or just eating straight off of the spoon!)

These are such a delicious treat and after making them my daughter said to me “my friend goes to Starbucks with her Mom and she gets a cake pop each time.”
